We have lots of farmland around us. Hutchens Lake and the boat launch are less then ¼ mile away. We are just 2 miles from Fenn Valley Winery, 3 miles to Crain’s Orchard, 6 miles east of Lake Michigan, Oval Beach, and the county park. We are 10 minutes from the Kalamazoo River for canoing and charter fishing on Lake Michigan along with sailing on the Sweetwater with Captain Mort. Wild West Ranch horseback riding and live music at the What-Not–Inn every weekend just 6 miles from inn. We are 20 minutes from South Haven, Holland and Allegan County Fairgrounds in Allegan. There are 400 antique dealers at the grounds.

POTATO PANCAKES
26 oz. bag frozen shredded potatoes, thawed
2 Tb. Flour
2 tsp. salt to taste
1 tsp. coarsely ground pepper
1/2 tsp. Thyme
1 carton Egg Beaters
4 Tb. Corn oil
3 Green onions, finely chopped
Thoroughly mix all ingredients in a large bowl.
Spoon mixture onto hot griddle and spread into 1/4 inch thick pancakes.
Cook about 8 minutes each side or until pancakes are browned and crispy.
Pancakes can be lightly cooked and held in a warm oven, then returned to the hot griddle and finished later.
Serve with Apple Sauce or Sour cream on the side.
Makes 12 pancakes.

ITALIAN OMELET
8 OZ. Fresh mushrooms, sliced,saute' with a little Garlic salt and Italian seasoning in some butter and a little olive oil
Saute' some Italian sausage also if you wish.
2 Eggs per Omelet
Spaghetti Sauce (any type) warming in a small pan.
1 package of Mozzarella cheese (1/4 cup per Omelet or as much as you like)
After Mushrooms are saut'e , beat 2 eggs in a bowl, use and omelet pan or a flat pan well oiled, spread into a round shape, while cooking fill lightly with some mushrooms and sausage and sprinkle some Mozzarella cheese lightly, fold one side into the center and them the other opposite side over that.
Top with a strip of spaghetti sauce down the center and then top with some more Mozzarella cheese.
Cook till cheese is melted
Serve with Toast or Garlic Bread for a dinner meal.

CRANBERRY ORANGE SCONES
2C. Flour(measure the flour by the spooning of flour into a measuring cup)
1/3 C. Cold butter
1 Tb. Grated orange peel
2 tsp. Baking powder
1/2 tsp. Salt
1/4 tsp. Baking soda
1 C. Cranberries
1/4 C. Orange juice
3/4 C. Cream
1 Egg
1 Tb. Milk
10 tsp. sugar - divided
Glaze: (Optional)
1/2 C. Confectioners' sugar
1 Tbs. Orange juice
Orange Butter:
2-3 Tb.. Orange Marmalade
1/2 C. Butter
In bowl combine flour and butter, blend until mixture resembles coarse crumbs add orange peel, baking power, salt and baking soda; set aside.
In a small bowl combine cranberries, orange juice, cream and egg.
Add to flour mixture and stir until a soft dough forms.
On a floured surface gently knead 6-8 times .
Pat dough into a 8 inch circle
Cut into 10 wedges.
Separate wedges and place on an non-greased cookie sheet.
Brush with milk them sprinkle with remaining sugar.
Bake at 400 degrees for 12-15 minutes until lightly browned.
Combine glaze ingredients if desired and drizzle over cooled scones.
Combine Orange Marmalade with butter ans serve with warm scones.
Makes 10 scones.

BREAD PUDDING
2 Quarts Milk
10 whole Eggs
1/2 tsp. Salt
1 tsp. Vanilla
8 oz. Sugar
1 lb. Bread , Crust trimmed off
Nutmeg to taste
Cinnamon to taste
Trim crust from bread, cut bread in halt, lay slices in a 9 X13" baking pan slightly overlapping each slice.
Break eggs in bowl and beat with a wire whip slightly.
Place milk and sugar in a sauce pan and heat until scalding(just before boiling)
Remove from heat.
Add salt and vanilla to the eggs in mixing bowl, pour this mixture into scalding milk and sugar mixture, being sure to beat mixture while adding.
Pour this custard mixture over bread slices, them put nutmeg and cinnamon over top.
Place the 9X13" pan into a second containing water for a (water bath) and bake in 375 degree oven until custard is set.
Remove for oven and let set until firm.
Can be served with a sauce or without, warm or cold
NOTE: For raisin pudding, add 10 oz. of raisins before pouring custard over bread.
Bake pudding only until custard is just set because custard continues to cook after it leaves the oven.
VANILLA SAUCE
2 qt. Boiling Water
3 oz. Cornstarch
2 lb. & 8 oz. sugar
3 oz. Egg yolks
10 oz. butter
1 tsp. salt
Vanilla to taste
Boil water, separate eggs, saving whites for another use.
Place cornstarch, salt and half the sugar in a saucepan: mix together with a spoon.
Add boiling water while shipping with a wire whip: cook for 10 minutes.
Beat egg yolks with a wire whip in a bowl: blend in the remaining sugar and pour slowly into the thickened mixture whipping all the time.
Cook about 2 minutes.
Remove from range and whip into butter and vanilla.
Pour into a container.
Serve hot over bread pudding, fruit cobblers or cakes.
